Please find the following options in Customize > WooCommerce > General.
1. Shop Page Display: you can display your products (default behavior), choose to display your parent categories, or show a mix of products and categories.
2. Category Display: same as above, the difference being that you can choose to display subcategories because you are already on a category page.
3. Default Product Sorting: you can set the default sorting on your shop archive pages, including the main catalog page.
